3-Ingredient Low Carb Cheesy Tortillas

Before I share the recipe I just want to say the term “tortilla” is used loosely here.  The actual definition of a tortilla is, a thin, flat pancake of cornmeal or flour, eaten hot or cold, typically with a savory filling.  Having said that, this “tortilla” is thin, flat and made with part skim mozzarella cheese and almond flour and you can actually pack it with a savory filling so i guess it qualifies as a tortilla!  However, I have to admit that when it comes to texture it does not feel like the kind of flour based tortillas I’m use to, but it works!  (Recipe from simplysohealthy.com)

Ingredients:

  • 2 cups park skim mozzarella cheese
  • 3/4 cup almond flour
  • 1/2 teaspoon salt

Makes 4 servings, approximately 4.5 grams  of net carbs

*You will also need parchment paper

Instructions:

Preheat oven to 400 degrees (fahrenheit).

Heat water in the bottom part of a double broiler until boiling, lower heat to simmer water. In the top part, add grated cheese, almond flour, and salt.

Carefully place the top portion onto the bottom portion of the double broiler.  Begin stirring slowly until all the cheese has melted and the ingredients have come together to form a ball.  Remove the top portion of the double broiler from the bottom portion and turn out the cheese ball onto a piece of parchment paper.

Divide the dough into 4 sections.  Take one section and form into a ball and then press into a “patty” like shape.  Place in between 2 pieces of parchment paper and roll out into a circle about 8-9 inches in diameter.  Remove the top sheet and place the bottom sheet with the dough on it onto a sheet pan.  Set aside and repeat the rolling process on the second tortilla.

Bake  both tortillas for 5-8 minutes or until the edges turn brown.  Keep a close eye on them to make sure they don’t burn.  Once they are done baking, remove from the pan and let cool on a wire rack.   Repeat the entire process for the third and fourth tortillas.

For best results, fill the tortillas while slightly warm.  To reheat tortillas, warm them in a 200 degree oven until they are pliable.
